Gomer's Banana Bread Pyle

My Mom seriously makes THE BEST banana nut bread I have ever had in my life...and I have tried a lot of banana bread.


This is a family recipe, so I have gone back and forth on even posting it. But I figure....I don't have many people who look at my blog, and even if they did, I like braggin about my Mom's cooking (and mine of course!). :)


This makes quite a big batch, but it never stays around for too long.

* 1 C butter or oil (I use butter)

* 2 C sugar

* 4 eggs, well beaten

* 6-7 bananas, mashed

* 2 1/2 C sifted all purpose flour

* 1 tsp salt

* 2 tsp baking soda

* 1/2 cup chopped walnuts



- Grease 2 large loaf pans or 5 small ones. I actually do 1 large loaf pan and 1 pan of muffins. Works out perfectly!

- Cream butter with sugar.

- Add eggs and beat well.

- Add the mashed bananas, stirring to blend.

- In a separate bowl sift together the dry ingredients.

- Fold the dry ingredients into the batter, mixing well.

- Add the nuts

- Pour the batter into the pans.

- Bake at 350 degrees for 45-50 minutes, or until done


** For muffins, fill 12 muffin cups 3/4 full and bake at 350 for 35-45 minutes


I usually cook for about 45 minutes for both. It might seem a little doughy when it first comes out of the oven, but it's just all the bananas. Once it's cooled, the bread is perfectly baked. Another thing I love doing is sprinkling sugar on the top of the bread. Do this about 15 minutes before it's done and it adds a nice crunchy topper to it.
